State the condition arriving at preparation
Record fresh or frozen supply, loose fruit or blocks, packaging and any treatment already performed. For frozen fruit, confirm that the material is whole berries rather than prepared pulp. Both can arrive frozen, but only whole berries require subsequent seed separation.
Describe the receiving and storage history that the plant can document. The process team must determine acceptable incoming conditions and release criteria. Equipment selection cannot compensate for an undefined fruit history or an uncontrolled waiting period.
Agree the pulper inlet requirement
Ask the pulper supplier to describe the feed condition needed for reliable separation. Include temperature or physical condition where relevant, permitted water addition and the maximum acceptable variation. Tie the preparation outlet to that requirement rather than selecting an isolated vessel.
Evaluate representative prepared berries in a separation trial. Inspect seed integrity, residual pulp and accepted product while recording preparation conditions. This shows whether the complete preparation and separation sequence meets the product requirement.
Keep physical preparation and safety controls explicit
A conditioning operation may be intended to achieve a physical feed condition. A validated hydrothermal fruit treatment has a separate food-safety purpose. The project drawing must state the duty and monitoring requirements of each rather than letting one name imply both.
Embrapa describes açaí processing practices that include selection, washing, sanitation and whole-fruit thermal treatment before pulping. That context does not establish a universal industrial recipe. Use the actual product, equipment and applicable requirements to establish the operating procedure with the responsible specialists.
| Question | Required project answer |
|---|---|
| What arrives? | Fresh / frozen whole fruit, packaging and previous preparation |
| What is required? | Pulper inlet condition and allowable variation |
| Which duty? | Physical conditioning, validated safety control, or explicitly separate operations |
| What is measured? | Water addition, conditions, lot and time history |
| Where does it go? | Controlled feed and defined response to a pulper stop |
Measure additions and process delay
Put water added to the product on a measured basis and carry it into the extraction mass balance. Keep washing, rinsing and preparation-water streams distinguishable on the process diagram. Product declaration and solids requirements constrain the formulation basis.
Map residence and waiting between preparation and pulping, including a downstream stop. Define how the operator identifies affected material and what disposition is permitted. An average preparation time alone can hide longer exposure for the first or last portion of a lot.
Specify an integrated preparation proposal
Request the feed and discharge arrangement, monitoring responsibilities, cleaning access and response to interruptions. A frozen-fruit configuration should explain controlled preparation from the actual incoming state, rather than assuming that ambient thawing creates a suitable feed.
No universal conditioning temperature, thawing time, water ratio or capacity is asserted here. Confirm those values for the selected process and equipment. Keep preparation in the full-line acceptance plan so its effect on pulp and seeds is visible at the pulper outlets.
Track the first and last fruit through preparation
Review how the beginning and end of a lot move through the proposed preparation sequence, especially when processing pauses. Identify where conditions are measured and how prepared material remains linked to the original lot. Include cleaning and the transition to the next lot. This helps the process team evaluate the actual operating history rather than relying on a single average preparation condition that may not represent every portion of the fruit.
Configuration & selection basis
| Inlet | Fresh or frozen whole berries |
|---|---|
| Outlet | Feed at the agreed condition for pulping |
| Key distinction | Physical preparation and validated safety control |
| Evidence | Documented preparation plus actual-berry separation trial |
The proposal defines model-specific ratings after product review and trials. Catalog performance with other fruits is not a validated açaí capacity.
Questions from equipment buyers
Is frozen whole fruit the same as frozen pulp?
No. Whole berries still contain seeds and need preparation followed by separation. Purchased frozen pulp begins after extraction.
Can one preparation recipe cover every supply?
Do not presume that. Fruit condition, incoming state, equipment and hygiene requirements need a product-specific procedure.
Does conditioning automatically mean blanching?
No. State the purpose of each operation. If a validated thermal fruit treatment is required, identify its separate controls, monitoring and acceptance responsibilities.
