Draw distinct water uses
Mark fruit-wash supply, any recirculating bath, rinse, preparation and cleaning circuits. Show drains and the collection of suspended or settled material. A common service header does not mean every use has the same quality or monitoring requirement.
Water that enters the product belongs in the extraction mass balance and formulation record. Water used only to clean external fruit surfaces belongs in the wash-water schedule. Identify the actual entry points rather than reporting a single combined water figure.
Assign water and sanitizer controls
The responsible hygiene team must establish applicable water requirements, permitted chemical products and control conditions for the actual operation. Use product directions and relevant requirements rather than copying a generic online concentration into a new industrial line.
Embrapa good-practice material describes selection, washing, sanitation and subsequent fruit treatment as distinct activities. The equipment should support the chosen procedure with accessible sampling, measurement, replenishment and drainage points.
| Control area | Question to resolve |
|---|---|
| Supply | Which water source and quality requirement apply? |
| Recirculation | How are debris, condition and replacement controlled? |
| Sanitizer | Who defines product, measurement, limits and corrective action? |
| Rinse / preparation | Where does water contact or enter the product? |
| Shutdown | How are bath, lines and retained soils drained and cleaned? |
Consider what a dirty lot changes
Incoming debris changes the load on a bath, strainers and drains. Ask how the operator observes accumulation and removes it without compromising accepted fruit. Include access underneath conveyors and inside wet chambers in the cleaning review.
Define the action when water conditions do not meet the operating procedure. It may require stopping, replacing water, cleaning and assessing affected fruit under the plant plan. An installed chemical dosing point alone does not establish process control.
Keep treatment and safety boundaries clear
Physical washing and sanitation controls support good manufacturing practice. They do not automatically establish the validated microbial treatment of the final pulp. Açaí has a documented foodborne contamination context, including oral transmission of T. cruzi identified by WHO.
Connect the water plan to the complete process hazard assessment, fruit preparation and any pulp treatment. The configured enquiry should include wash scope and control responsibilities alongside the machine layout and production basis.
Questions from equipment buyers
Can wash water be included in extraction yield?
Only water actually entering the product belongs in the product mass balance. Record external wash use separately.
What sanitizer concentration should be used?
The responsible specialists must establish the permitted product and conditions for the operation using applicable requirements and product directions. This page does not supply a universal recipe.
Does a recirculation pump make the wash water controlled?
No. The plan also needs defined quality, monitoring, debris removal, replacement and corrective action.
